Pumpkin Protein Balls

Pumpkin Protein Balls
1 can of pumpkin puree (organic).
1/2 cup of natural peanut butter or almond butter (just peanuts and salt – I use Smuckers organic)
1/4 cup of honey or agave
2 teaspoons of vanilla extract
1 1/2 cups of rolled oats (I use old fashioned oats)
A pinch of salt. 1-2 scoops of your protein of choice (suggestion to stick with vanilla or chocolate to not take away from the deliciousness of these)
1/3 cup of mini chocolate chips – dairy free (I use the enjoy! brand)
**You can add unsweetened shredded coconuts for added texture
 

Directions
Pumpkin Protein Balls

  1. In a mixing bowl or a food processor, add in all the ingredients mentioned above.
  2. Mix all ingredients together throughly.
  3. Place in refrigerator for at least 1 hour
  4. Using a spoon or spatula, take 1-2 tablespoons of mixture and roll it into a ball.
  5. Place balls on parchment paper and allow to sit.
  6. You can store them in the refrigerator and eat at your will.

These are a great quick protein snack…I usually eat 2-3 at a time…. A simple and quick snack that prepares enough to last an entire week! Enjoy!
